Carrot Ginger Dressing

Ingredients

1 teaspoon
1 inch knob of ginger
2 cloves garlic
1 small shallot
1 lemon, juiced
3 tablespoons white miso
1 tablespoon sesame oil
3 tablespoons rice vinegar
½ cup water plus more if needed
¾ cup canola oil
2 teaspoons salt, more to taste

Directions
  1. Peel carrots and ginger and slice into thin pieces. Roughly chop the garlic and shallots.

  2. Add all ingredients except the salt to a blender and process until smooth. Add more water to adjust the consistency to be thinner.

  3. Once you have reached the desired texture for your dressing, blend in salt to taste. Serve dressing with any salad or cooked vegetables of your choice.


Quick Tips
  • To make a sweeter and smoother dressing, boil the chopped carrots for 2 minutes, cool and blend.

  • This dressing will keep in an airtight container for one week.

  • Carrots are a good source of Vitamin A, K and B6.
