Chive Walnut Soba Noodles
Ingredients
½ cup walnuts
3 tablespoons olive oil
½ cup minced onion
1 teaspoon minced garlic
1 cup of chopped chives
¼ teaspoon salt
1 tablespoon nutritional yeast or soy sauce
8 ounces dried soba noodles
Salt and pepper to taste
Directions
In a saucepan over low heat, toast the walnuts for 3-5 minutes or until fragrant. Place the walnuts to cool in a large mixing bowl. Finely chop the walnuts and place into the bowl.
Add olive oil into the same pan and cook the onions for 3 minutes. Add the garlic and cook for 2 minutes. Turn off the heat and stir in the chives. Decant the chive mixture into the walnut bowl and stir in salt and nutritional yeast until combined.
Fill the same saucepan with water three-quarters full and bring to a boil. Cook the soba noodles according to package directions. Drain the noodles and stir directly into the chive mixture for a hot noodle dish. To make a cold version, rinse the cooked noodles in ice cold water, drain and stir with the chive mixture. Taste and add salt and pepper as desired. The cold version makes better leftovers than the hot.

Chives and garlic chives can be used interchangeably in this dish. Chives are hollow, more delicate and have an onion flavor.
Garlic chives can be flat or rounded stems that are heartier and pack a garlic punch. If using garlic chives, use half the amount.
