Light Coleslaw
Ingredients
4 cups shredded green cabbage (about ½ head cabbage)
1 teaspoon salt
1 cup shredded carrots (about 2 medium carrots)
2 tablespoons reduced-fat mayonnaise
2 tablespoons low-fat plain yogurt
1 tablespoon vinegar
1 tablespoon honey
Directions
In a large bowl, add cabbage and sprinkle salt all over. Toss the cabbage with a large spoon and set aside for five minutes. This will help soften the cabbage.
Add the carrots, mayonnaise, yogurt, vinegar and honey. Stir well with the spoon until well combined. Set the coleslaw aside for 5 minutes for the vegetables to marinate. Serve cold or at room temperature.
Quick Tips
Cabbage is high in vitamin C and vitamin K.
This can be served on its own or with barbecue meat or placed inside a sandwich.
The coleslaw is better the day after it is made. The cabbage takes on more flavor and becomes softer.
