Pea Fritters
Ingredients1 pound frozen peas
3 eggs
¾ teaspoon salt
⅓ cup finely chopped scallions
⅓ cup finely chopped parsley
1 ½ cups all purpose flour
2 teaspoons baking powder
1 teaspoon ground black pepper
½ cup water
1 ½ cups shredded part-skim mozzarella
Olive oil for frying
DirectionsIn a medium saucepan, bring 2 quarts of water to a boil. Add the peas and cook for 1-2 minutes, drain and set aside to cool.
Add the half of the peas, eggs, and salt to a food processor or blender and pulse until combined.
Decant the blended mixture into a large mixing bowl. Stir in the remaining peas, scallions, parsley, flour, baking powder, black pepper and water. Mix until combined, fold in the mozzarella cheese.
In a large skillet, heat 2 tablespoons of olive oil over medium heat for 2 minutes. Use a 2.75 ounce cookie scoop or a 1⁄3 measuring cup and spoon the mixture into the pan, fitting 4 to 5 fritters in the pan. Lightly pat the fritters with a rubber spatula to flatten them to ½ inch thick cakes. Fry each side for 3 minutes, until golden brown and crispy. Repeat until all the mixture is used up, adding oil in between each batch when necessary.

To make this for picky eaters omit water and use 1 cup of flour and mozzarella only. Blend half of the cheese with all the ingredients until smooth. Decant the mixture into a bowl. Fold in remaining cheese until combined and proceed to cook. This version cooks faster.
