Three Cup Chicken
Ingredients
1 pound chicken drumsticks or thighs
2 tablespoons toasted sesame oil
2-inch piece ginger, peeled and sliced thinly
6 cloves garlic, peeled
1 1/2 tablespoons soy sauce
1 1/2 tablespoons dark sweet soy sauce
1 1/2 tablespoons Shaoxing wine
1 bunch Thai basil leaves
Directions
Chop the chicken into 2-inch pieces and rinse them with water. Pat dry the chicken pieces and set them aside.
Heat up a clay pot or skillet over high heat and add the sesame oil.
Add the ginger and garlic, and stir-fry until aromatic. Add the chicken and cook for 3 minutes, stirring often. Then, add the soy sauce, dark sweet soy sauce, Shaoxing wine and continue to stir-fry the chicken.
Add ¼ cup water to the chicken and cover the pot with a lid. Lower the heat and simmer for 8-10 minutes. Add the basil leaves and stir into the chicken.
Serve immediately with rice or salad of your choice.

Three Cup Chicken is a popular Taiwanese dish that originated from southern China in the 900’s. The name is derived from the need for three different cups of sauces to flavor the dish: soy sauce, rice wine and sesame oil.
