Sweet & Sour Bok Choy with Leeks
INGREDIENTS
2 tablespoons olive oil
1 medium leek, cut in half and sliced
2 cloves garlic, minced
1 pound bok choy, chopped
1 tablespoon soy sauce
1 teaspoon honey
½ lime, juiced
¼ teaspoons red pepper flakes
¼ cup chopped cilantro
Salt to taste
DIRECTIONS
Heat olive oil in a large pan over medium heat. Add leek and cook until soft, about 5 minutes. Stir in garlic and cook 30 seconds more.
Add the white portion of the chopped bok choy and cook until soft, about 5 minutes.
Add bok choy greens, soy sauce, honey, lime juice, red pepper flakes and cilantro.
Mix to combine, and serve warm!

Bok choy is traditional to Chinese cooking, and is in the same vegetable family as kale and cabbage.
Bok choy is high in vitamin C and vitamin A.
Substitute green cabbage in this recipe if you can’t find bok choy.
