Sweet & Sour Bok Choy with Leeks

INGREDIENTS

2 tablespoons olive oil
1 medium leek, cut in half and sliced
2 cloves garlic, minced
1 pound bok choy, chopped
1 tablespoon soy sauce
1 teaspoon honey
½ lime, juiced
¼ teaspoons red pepper flakes
¼ cup chopped cilantro
Salt to taste



DIRECTIONS

  1. Heat olive oil in a large pan over medium heat. Add leek and cook until soft, about 5 minutes. Stir in garlic and cook 30 seconds more.

  2. Add the white portion of the chopped bok choy and cook until soft, about 5 minutes. 

  3. Add bok choy greens, soy sauce, honey, lime juice, red pepper flakes and cilantro. 

  4. Mix to combine, and serve warm!

quick tips

  • Bok choy is traditional to Chinese cooking, and is in the same vegetable family as kale and cabbage.

  • Bok choy is high in vitamin C and vitamin A.

  • Substitute green cabbage in this recipe if you can’t find bok choy.
