Apple Cinnamon Muffins

INGREDIENTS

¾ cups all purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
⅓ cup olive oil
¼ cup maple syrup
2 eggs, whisked
½ cup plain Greek yogurt
1 teaspoon vanilla extract
2 medium apples, grated
1 large apple, cut into cubes


DIRECTIONS

  1. Preheat your oven to 325 degrees Fahrenheit. 

  2. In a large mixing bowl, stir together the whole wheat flour, baking powder, baking soda, cinnamon and salt. 

  3. In a small mixing bowl, combine the olive oil, maple syrup, eggs, plain Greek yogurt and vanilla extract. Mix until well combined.

  4. Add the “wet” ingredients to the “dry” ingredients and stir to combine. Gently fold in the grated and chopped apples.

  5. Line muffin pan with paper liners or spray with nonstick cooking spray. Spoon in batter to the top of each muffin cup. Bake for about 23-25 minutes or until muffins are fully baked.

quick tips

  • Wrap muffins individually in aluminum foil and store in the freezer for up to 3 months.

  • Any apple variety will work well in the recipe! We love using Braeburn, Honey Crisp and Granny Smith.

  • Don’t peel your apples! The skin is a good source of fiber.
