Brussels Sprouts with Spicy Peanut Dressing
INGREDIENTS
2 tablespoons olive oil
1 tablespoons peanut butter
2 tablespoons soy sauce
1 teaspoon honey
¼ teaspoon red pepper flakes
2 garlic cloves, minced
1 medium onion, chopped
5 cups thinly sliced Brussels Sprouts
DIRECTIONS
To prepare the dressing, mix 1 tablespoon olive oil, peanut butter, soy sauce, honey, and red pepper flakes in a small bowl until smooth. Set aside.
Heat remaining 1 tablespoon oil in a large frying pan over medium heat. Add onion and cook for 3 minutes or until soft.
Add garlic and cook for 1 minute more, until fragrant.
Add Brussels sprouts and cook for 4-5 minutes. Pour dressing over vegetables and cook 30 seconds more.
