Carrot Ginger Soup

INGREDIENTS

2 tablespoons olive oil
1 small onion, chopped
2 pounds carrots, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger
½ teaspoon cumin
4 cups homemade vegetable broth (or water)
1 lemon, juiced
Salt to taste


DIRECTIONS

  1. In a large soup pot, heat olive oil over medium heat. Add onion and cook until soft, about 5 minutes.

  1. Add carrots, garlic, garlic, ginger, cumin and salt to taste, and stir to combine. Cook until garlic and spices are fragrant, about 3 to 5 minutes.

  2. Pour in homemade vegetable broth or water, and bring to a boil. Lower the heat, cover the pot, and simmer for about 25 to 30 minutes. Stir occasionally and turn off the heat when the carrots are tender.

  3. Use an immersion blender to puree the soup, or puree in a blender and return it to the pot. Stir in lemon juice, and serve and enjoy!

quick tips

  • You can roast the chopped carrots in a 400° oven prior to adding them to the pot for a more caramelized flavor.

  • Ginger is an anti-inflammatory and can help combat nausea. 

  • Top your soup serving with roasted pepitas or chopped cilantro!
