Chilean Tomato Salad

INGREDIENTS

1 cup thinly sliced onions
½ teaspoon salt
4 cups sliced tomatoes
¼ cup chopped cilantro
Salt to taste




DIRECTIONS

  1. Place onions in a small bowl and sprinkle with salt. Set aside for 20-30 minutes. 

  2. Rinse onions under water to remove salt. Drain well. 

  3. In a large bowl, combine tomatoes, onions, and cilantro. Add olive oil and mix well. 

  4. Enjoy or refrigerate and serve cold!

  • Tomatoes taste best and are most affordable in the summer when they are in season. Off-season tomatoes tend to be more watery and tart in flavor. 

  • Tomatoes are rich in antioxidants, notably lycopene, which has been linked to reduced risk of heart disease and cancer. 

  • Eating raw tomatoes provides more vitamin C, while eating cooked tomatoes provides more lycopene. Consuming both formats is equally healthy.
