Curried Winter Squash and Potato
INGREDIENTS
2 tablespoons olive oil
1 onion, sliced
1 garlic clove, chopped
2½ teaspoons curry powder
1 small winter squash, chopped
2 small potatoes, chopped
¾ cup raisins
¼ cup chopped fresh cilantro (optional)
Salt to taste
DIRECTIONS
1. Heat oil in a medium pot over medium heat. Add onion and cook for 5 minutes, until soft.
2. Add garlic and cook for 1 minute more.
3. Add curry, winter squash, potatoes and salt. Cook for 3 minutes, stirring often.
4. Add 1½ cups water and raisins. Cover and cook until the squash and potatoes are soft, about 10 to 15 minutes
5. Add cilantro, if desired. Serve and enjoy!

Examples of winter squash include butternut squash, acorn squash, and delicata squash.
To prepare fresh squash, remove seeds and cut into small pieces. Roast the seeds for a protein-rich snack!
Winter squash can be stored in a cool, dark place for up to 3 months.
