Curried Winter Squash and Potato

INGREDIENTS

2 tablespoons olive oil
1 onion, sliced
1 garlic clove, chopped
2½ teaspoons curry powder
1 small winter squash, chopped
2 small potatoes, chopped
¾ cup raisins
¼ cup chopped fresh cilantro (optional)
Salt to taste


DIRECTIONS

1. Heat oil in a medium pot over medium heat. Add onion and cook for 5 minutes, until soft. 

2. Add garlic and cook for 1 minute more.

3. Add curry, winter squash, potatoes and salt. Cook for 3 minutes, stirring often.

4. Add 1½ cups water and raisins. Cover and cook until the squash and potatoes are soft, about 10 to 15 minutes

5. Add cilantro, if desired. Serve and enjoy!

  • Examples of winter squash include butternut squash, acorn squash, and delicata squash.

  • To prepare fresh squash, remove seeds and cut into small pieces. Roast the seeds for a protein-rich snack!

  • Winter squash can be stored in a cool, dark place for up to 3 months.
