Scallion Omelette
Ingredients2 cups scallions, chopped
1 medium onion, chopped
2 garlic cloves
6 eggs
½ tsp ground black pepper
3 tbsp olive oil, separated
Salt to taste
DirectionsIn a large fry pan over medium heat, sauté the finely chopped green onion, onion and garlic in half of the olive oil. Cook for 3 minutes.
Separately, in a bowl, beat the eggs well, season with salt and pepper and add the vegetables sautéed in oil.
Mix the eggs and vegetables and well and pour it back into the pan, adding the remaining olive oil if needed.
Cook the omelet on both sides until browned. Use a plate or lid to help flip your omelet. Remove from heat and cut to serve in portions.
