Honey Glazed Parsnips & Carrots

INGREDIENTS

4 medium parsnips, cut ½-inch slices
4 medium carrots, cut ½-inch slices
2 tablespoons olive oil
1 teaspoon apple cider vinegar
1 tablespoon honey
2 cloves garlic, finely chopped
2 tablespoons chopped thyme
salt to taste


DIRECTIONS

  1. Preheat your oven to 375 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper or aluminum foil and set aside.

  2. In a small bowl, mix the olive oil, apple cider vinegar, honey, garlic, thyme and salt to combine.

  3. Add the parsnips and carrots to a large bowl, then pour over the olive oil mixture. Stir to combine.

  4. Lay the parsnips and carrots evenly over the baking sheet. Bake until soft and caramelized, about 35 to 40 minutes.

quick tips

  • Trim off the woody end of parsnips before cooking.

  • Parsnips have a similar starch content as potatoes, but are higher in fiber.

  • No need to peel your parsnips or carrots! Just wash well with a scrub brush and dry before baking.
