Oven-Baked Chicken Tenders

INGREDIENTS

1 ¼ pounds boneless skinless chicken breasts cut into 1-inch strips
½ reduced fat milk
2 eggs
4 cups cornflakes
½ teaspoon smoked paprika
½ teaspoon salt 
Cooking spray


DIRECTIONS

  1. Preheat the oven to 425ºF. Line a sheet pan with parchment paper or foil and coat with cooking spray.

  2. Pour the cornflakes into a large Ziploc bag, and crush with your hands until small crumbs form. Pour into a medium bowl and add the smoked paprika and salt. Stir to combine.

  3. Add the milk and eggs into a medium bowl, and whisk to combine.

  4. Dip each chicken piece into the milk mixture, then roll in the cornflakes.

  5. Place the chicken on your baking sheet. Spray the tops of the chicken with more cooking spray.

  6. Bake for 15 minutes or until chicken is cooked. Serve with your favorite dipping sauce!

  • The cooking spray helps the cornflakes get nice and crispy, without adding the extra fat from deep frying.

  • To ensure doneness, cut into a piece of chicken -- there should be no pink spots.
