Pumpkin Oat Pancakes

INGREDIENTS

1 cup flour
½ cup oats
1 ½ teaspoons baking powder
1 ½ teaspoon cinnamon
1 tablespoon sugar or maple syrup
⅔ cup pumpkin pureé (canned or cooked from fresh)
2 eggs
¾ cup milk


DIRECTIONS

  1. In a large mixing bowl, stir together the flour, oats, baking powder and cinnamon. 

  2. In a small mixing bowl, whisk the sugar or maple syrup, pumpkin puree, eggs and milk until combined. Add these “wet” ingredients to the “dry” ingredients in the large mixing bowl and stir to combine. Add the “wet” ingredients into the large bowl that contains the “dry” ingredients. Stir to combine. 

  3. Heat a large frying pan over low heat. When warm, coat the bottom of the pan with butter or oil. Add ¼ cup pancake batter and spread into a circle. 

  4. Cook pancakes until the edges look set, about 3-4 minutes. Flip and continue cooking until done. Repeat with remaining batter. Serve hot and enjoy!
