Quinoa Blueberry Spinach Salad
INGREDIENTS
1 cup uncooked quinoa
1 cup blueberries
1 avocado, pitted and diced
2 cups chopped spinach
½ cup chopped walnuts (optional)
¼ cup olive oil
1 lemon, juiced
Salt to taste
DIRECTIONS
Prepare quinoa according to package directions. Set aside to cool.
In a large bowl, combine cooled quinoa, blueberries, avocado, spinach and walnuts, if using.
To make the dressing, combine the olive oil, lemon juice and salt to taste in a small bowl. Mix well.
Pour dressing over bowl with quinoa mixture and stir to combine.
Serve immediately or refrigerate for up to 3 days.

You can use frozen blueberries in place of fresh blueberries in this recipe; just thaw blueberries before using.
