Quinoa Blueberry Spinach Salad

INGREDIENTS

1 cup uncooked quinoa
1 cup blueberries
1 avocado, pitted and diced
2 cups chopped spinach
½ cup chopped walnuts (optional)
¼ cup olive oil
1 lemon, juiced
Salt to taste


DIRECTIONS

  1. Prepare quinoa according to package directions. Set aside to cool.

  2. In a large bowl, combine cooled quinoa, blueberries, avocado, spinach and walnuts, if using.

  3. To make the dressing, combine the olive oil, lemon juice and salt to taste in a small bowl. Mix well.

  4. Pour dressing over bowl with quinoa mixture and stir to combine.

  5. Serve immediately or refrigerate for up to 3 days.

  • Blueberries are a good source of magnesium, which helps our bodies process cholesterol.

  • You can use frozen blueberries in place of fresh blueberries in this recipe; just thaw blueberries before using.

  • To extend the list of your blueberries, only wash when you’re ready to use!
