Triple Pepper Quesadillas

INGREDIENTS

4 (8-inch) flour tortillas
2 tablespoons olive oil
1 small red pepper, diced
1 small orange or yellow pepper, diced
½ small jalapeño, seeded and minced
½ teaspoon chili powder
½ lime, juiced
1 cup shredded cheese, Mexican blend Cooking spray
Salt to taste


DIRECTIONS

  1. Preheat your oven to 425 degrees. Spray a baking sheet with cooking spray and set aside.

  2. Heat 2 tablespoons of olive oil in a large sauté pan over medium-high heat. Add red pepper, orange or yellow pepper, and jalapeño. Cook until soft, about 5 minutes.

  3. Add chili powder, lime juice and salt to taste. Stir to combine and remove pan from heat.

  4. Take one tortilla, and fill one half with shredded cheese and pepper mixture. Fold over in half and transfer to baking sheet. Spray top with more cooking spray.

  5. Repeat step 4 with remaining tortillas, then bake for 10-12 minutes until tortillas are golden and cheese is melted.

  6. Serve with your favorite salsa or guacamole, and enjoy!

quick tips

  • Add cooked black beans to the pepper mixture for extra protein!

  • You can add more or less of the chili powder and jalapeño, depending on your love for spice.

  • Make a quick salsa by combining chopped tomatoes, onion, cilantro, lime juice and salt in a bowl!
