Twice Baked Sweet Potatoes

INGREDIENTS

4 medium sweet potatoes
2 cups chopped broccoli 
1 tablespoon olive oil
1 garlic clove, minced
½ teaspoon Dijon mustard
½ lemon, juiced
¼ cup chopped scallions
½ cup shredded cheddar cheese (optional)
¼ cup chopped parsley 
Salt to taste


DIRECTIONS

  1. Preheat oven to 425 degrees Fahrenheit.

  2. Bake sweet potatoes for about 45 minutes, or until soft. Slice sweet potatoes in half the long way and scoop out insides. Set aside in a bowl and mash until smooth.

  3. Steam or boil broccoli for 3 minutes, until soft.

  4. In a medium bowl combine olive oil, garlic, Dijon mustard, lemon juice and scallions, and stir. Add steamed broccoli and salt to taste.

  5. Fill each half of potato with a tablespoon of sweet potato mash, the broccoli mixture and sprinkle with cheese if using.

  6. Bake for 10 more minutes or until cheese is melted. Top with chopped parsley and serve!
