Whole Wheat Banana Muffins

INGREDIENTS

Ingredients:
1 ½ cups whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
3 very ripe bananas
1 tablespoon maple syrup
4 tablespoons melted butter or oil
1 teaspoon vanilla extract


DIRECTIONS

  1. Preheat oven to 350 degrees Fahrenheit. 

  2. In a large mixing bowl, stir together the whole wheat flour, baking soda, cinnamon and salt. 

  3. In a small mixing bowl, peel and mash bananas with the back of a fork. Stir in maple syrup, melted butter or oil, and vanilla extract until combined.

  4. Add the “wet” ingredients to the “dry” ingredients and stir to combine. 

  5. Line muffin pan with paper liners or spray with nonstick cooking spray. Spoon in batter to the top of each muffin cup. Bake for about 25 minutes or until muffins are fully baked.

  • Add ½ cup of chopped nuts for extra fiber and protein.

  • Keep muffins in a sealed container for up to 5 days.

  • This recipe can also be made in a loaf pan and baked for 45-50 minutes.
