Zucchini “Spaghetti”
INGREDIENTS
1 tablespoon olive oil
1 cup chopped onion
4 cloves garlic, minced
2 large tomatoes, chopped
or
1 (14-Oz) can crushed tomatoes
2 medium zucchinis, sliced into thin strips
¼ teaspoon red pepper flakes
Salt to taste
DIRECTIONS
In a large pan, heat oil over medium heat.
Add onion and cook until soft, about 5 minutes.
Add garlic and stir for 1 minute or until fragrant.
Add tomatoes and cook for 10 minutes, stirring often.
Add zucchini and cook until soft, about 3 minutes. Add red pepper flakes.
Enjoy by itself or with your favorite whole wheat pasta!
