Zucchini “Spaghetti”

INGREDIENTS

1 tablespoon olive oil
1 cup chopped onion
4 cloves garlic, minced
2 large tomatoes, chopped
or
1 (14-Oz) can crushed tomatoes
2 medium zucchinis, sliced into thin strips
¼ teaspoon red pepper flakes
Salt to taste


DIRECTIONS

  1. In a large pan, heat oil over medium heat.

  2. Add onion and cook until soft, about 5 minutes.

  3. Add garlic and stir for 1 minute or until fragrant.

  4. Add tomatoes and cook for 10 minutes, stirring often.

  5. Add zucchini and cook until soft, about 3 minutes. Add red pepper flakes.

  6. Enjoy by itself or with your favorite whole wheat pasta!
