Fiesta Quinoa Salad
INGREDIENTS
1 cup dried quinoa
1 can (15 oz) black beans, rinsed
1 small bell pepper, chopped
½ medium cucumber, chopped
½ medium red onion, chopped
1 cup cherry tomatoes, cut in half
1 whole avocado, diced (optional)
¼ cup cilantro, chopped
⅓ cup olive oil
2 whole limes, juiced
1 teaspoon cumin
Salt to taste
DIRECTIONS
Cook quinoa according to package directions. Allow to cool completely in a medium bowl.
To prepare the dressing, mix olive oil, lime juice, cumin, and salt in a small bowl.
Add black beans, bell pepper, red onion, tomatoes, avocado, and cilantro to quinoa. Add dressing and mix well.
